Chicken Fried Steak Recipe

That is what is for dinner tonight. My recipe is very southern in that it's not very exact, but it ends up quite delicious. For CFS a la Trifecta you will need flour, oil,chicken broth, milk, rice, and onions handy. Oh, and cube steak. 3 lbs will feed six very well. Much of the effort in this dish is the prep time.


Preheat oven to 375.
Take 3 large onions, finely dice them (set them aside)
Heat a heavy pot on medium/medium high heat, and place an inch of oil inside.
Take a plate, cover it with all purpose flour, season with salt, pepper, and cajun seasoning.
In a bowl, mix a couple eggs up with about 2 cups of milk.
Dredge pieces of cube steak in flour, dunk in egg mixture, then back in the flour again. Fry until golden brown on both sides, flipping once. Drain, cube steak as you go along, and place in an oven safe vessel that has alot of room.

When you are finished frying the cube steak, dump the onions into the cooking oil, continually stirring, caramelizing the onions. Add in enough flour to make a thick roux, constantly stirring for about 3 minutes until the flour is cooked through. Toss in milk, and chicken broth in til it looks about right. Once it comes to a boil, if it's too thick, thin it some more with more liquid. Taste it at this point. Add salt and pepper as need, and dump on top of the cube steaks. Cover, place in the oven for 3 hours.

About 30 minutes before the steaks are done, cook up some boiled rice, serve the steaks and gravy over the rice. Enjoy, then call your cardiologist the next day for a check-up.
